400g. The Muscovado sugar comes from the Norandino/CEPICAFE cooperative in the north of Peru where it is usually grown as a secondary product by small scale coffee and cocoa farmers. It is different from our standard golden light sugar in that it is completely unrefined – the sugar cane juice is just boiled down until it becomes solid. It is not a crystallised sugar and it retains all the nutritional value and flavour of the whole molasses.
Muscovado sugar can be used anywhere soft brown sugar would be used and it will impart a richer, more complex flavour.
